But if you crave something rich and savory, these incredibly cheesy sausage egg muffins will make your day. They're loaded with eggs, ham, ground sausage, two kinds of cheese, making them super filling.
The mozzarella and parmesan shredded cheese blend together delightfully to create a fantastic flavor while making the sausage cheese muffins extra creamy, soft, and delicious. Each bite will literally melt in your mouth.

Learn how to make these fantastic breakfast egg muffin cups with sausage with my step-by-step instructions, processed recipe shots, and helpful cooking tips. They are quick and so easy to make. It only takes 15 minutes of meal prep and 35 minutes to cook. You can even make it on busy weekdays!
Prepare the eggs and gravy:
- In a large bowl, whisk eggs together with salt and pepper using a fork or egg beater until blended.
- Place the skillet over medium heat (you can add a bit of cooking oil if you want). Add the ground sausage and cook until crumbled and cooked through. Use the wooden spatula to break up the meat. Try a potato masher if you find a spatula too much of a hassle.
- Add in the cream cheese, broth, and stir. Continue stirring until the mixture is thickened and comes to a simmer.
- Reduce the heat to medium-low, constantly stirring, then simmer for another 2 minutes.
- Season with salt and pepper to taste.
- Remove from heat, then set aside.
- In the meantime, preheat the oven to 325 degrees Fahrenheit.
Assemble the egg muffins:
Before assembling the egg muffins, spray the muffin tins with the non-stick spray. Use the technique mentioned above. And if you prefer liners, line each muffin tin carefully.
Step 1
Line the bottom of each muffin tin with two slices of ham. Make sure you cover the whole surface, and the slices don't overlap each other. You can use a wooden spoon or your fingers to press the meat down to make room for other ingredients.
Step 2
Add the sausage gravy into each muffin tin between ½ to ¾ full—the latter works for me.
Step 3
Pour the egg mixture into each muffin pan. Try to divide the beaten eggs evenly.
Step 4
Top muffin tins with equal parts of the shredded cheeses. The cheeses should completely cover the egg mix then;

Bake for approximately 30-40 minutes or until the eggs set and cheese is melted and bubbly. Be sure to keep a close eye on the egg muffin cups towards the end of the bake to avoid burning them.
Step 6
Garnish with green onions or fresh herbs, if desired.
Let the egg muffin cups cool for 5- 10 minutes, then serve.

While baking cup liners make it easier to eat muffins out of hand, I still prefer using non-stick olive oil spray or shortening cause my muffins always stick to the liners. But this is a matter of preference, so use whatever works for you.
Use a pastry brush to grease the muffin tin perfectly to ensure you don't miss a patch when coating the muffin pan.
Keep an eye on the egg muffins while they bake. You can use the knife/ toothpick test just to be sure. If they come out clean, the muffins are ready.

Silicone molds seldom require greasing. In general, however, silicone molds don't need to be oiled. When it comes time to clean them later, cooking sprays or grease before baking and cooking may make your life a lot easier.

Consider buying non-stick parchment paper muffin liners. To completely stop egg muffins from sticking to the paper liners, you'll still need a spritz of oil. An alternative is to opt for a silicone muffin or cupcake tray, which does not require added oil or paper liners.

Make sure your oven isn't too hot! If the oven is too hot, the muffins will puff considerably and then collapse once they're removed. Allow the muffins to cool inside the tin before removing them; otherwise, they'll deflate while you're eating them.
